Watermelon Salad with Red Onions, Feta, and Mint

No other fruit says summer quite like watermelon. It’s one of my favorite fruits; I can eat it every day! So if you’re a watermelon lover as well, you’re going to love today’s post.

Below I share my favorite summer salad recipe: a mixture of watermelon, red onions, mint and feta. This quick and easy salad works great as a refreshing snack or as a menu item for a summer cookout or party. I made it for a 4th of July family gathering and everyone loved it. It will make a perfect addition to your upcoming Labor Day party menu.

Alternatively, you can get a little creative and top the ingredients on watermelon slices.

If you are as adventurous as I am when it comes to experimenting with flavors and food combinations, try adding the salad to your favorite brunch dish. This past weekend I topped it on homemade chicken and waffles and it was AWESOME SAUCE! I also imagine it pairing well as a side salad to your omelet, breakfast casserole or eggs benedict.

WATERMELON SALAD RECIPE

Serves 4


 Ingredients
6 cups seedless watermelon (chopped into bite size cubes)
1/2 cup chopped red onions
1/2 cup fresh mint leaves, sliced
1/2 cup crumbled tomato & basil feta cheese
1 lime, juiced
2 tablespoons balsamic vinegar
Kosher salt and freshly ground black pepper to taste

Instructions
1. Mix watermelon cubes and chopped red onions in large salad bowl. Be sure to drain watermelon after chopping.
2. Add lime juice and balsamic vinegar, and toss gently to coat.
3. Gently combine the mint and feta.
4. Sprinkle salad with salt and pepper to taste.

The salad is best if served within hours of preparing as the watermelon springs a lot of water. Feel free to vary quantities of ingredients based on your taste preferences. You can also try variations of this salad by adding any of the following: cucumbers, avocado, cherry tomatoes or toasted almonds.
